This February, we celebrated our fall wedding by heading to the beautiful Hacienda Encantada Resort and Spa in Cabo San Lucas, Mexico. The weather was perfect and the surroundings were comfortable and relaxing. It was not a spring break party destination, so we enjoyed the peace and quiet.
What better way to spend a week in paradise than to do it with your friends?! We invited two couples to spend the week with us, so John, Ashlee, Hillary and John stayed at the resort with us and enjoyed the Mexican sun (and Tequila).
We spent our days lounging at the pool and enjoying the beautiful and relaxing view. There was a swim up bar, and soon the workers knew us by name and drink! Our room overlooked the ocean and the sound of the waves against the rocks lulled us to sleep each night.
We spent some time in downtown Cabo, and met up with more of our Minnesota friends Scott and Melissa who where in town for a wedding. We enjoyed dinner at a little hole-in-the-wall, La Casa del Camaron (The Shrimp House), where they serve great food and their famous Bulldogs (a giant margarita with a Corona poured into it).
We did take one day out on a boat to try to get some whale watching in. We managed to see a few whales without getting seasick, and also got a great view of the famous"El Arco," a popular tourist spot and sunning destination for sea lions.
One of the highlights of the trip was a day spent at Cabo del Sol, a championship golf course right on the ocean. Tyler and his friend John played the course, while Ashlee and I took in some photo opportunities. The day was amazing and definitely something to remember.
